We looked far and wide for a decaffeinated coffee on par with our other offerings, and Los Idolos stopped us in our tracks. Hailing from Huila, Colombia, the caffeine is removed via Natural Ethyl Acetate Process. "Natural" is not a misnomer in this case, as it is actually derived from fermented organic sugar cane grown in the same region. The polarity of Ethyl Acetate targets the caffeine more than the flavor, yielding a cup that is brighter, sweeter, and more complex than any decaf we have cupped before. Decaffeination via this process has so many benefits. The cup quality is amazing. More money stays in the region where the coffee is grown. The environmental impact is drastically lessened as the coffee does not have to be shipped to another country to be decaffeinated and then shipped to us.
